What our research found about chocolate
Chocolate labels are short but not all alike. Dark chocolate lists cacao (beans, nibs or mass), cocoa butter and sugar; milk chocolate adds milk powders; baking chocolate may be unsweetened. Cacao percentage tells you the share of cocoa-bean ingredients, with higher numbers meaning less sugar and more bitterness. Soy lecithin is a common emulsifier, and fair-trade or organic claims describe sourcing and farming.
Heavy metals are worth knowing about. Consumer Reports tested 28 dark chocolate bars and found cadmium and lead in all of them; for 23 of the bars, an ounce a day would put an adult over the level it considers potentially harmful for at least one of the two metals. The finding does not mean avoiding chocolate, but it suggests treating it as a treat, varying brands, and checking whether a maker publishes lot testing.

What to compare
- Cacao percentage and sugar. Higher cacao generally means less sugar; compare grams per serving.
- Ingredient list. Cacao, cocoa butter and sugar should dominate; soy lecithin and vanilla are common.
- Sweetener type. Cane sugar, coconut sugar, monk fruit, stevia or erythritol appear on this shelf.
- Heavy-metal testing. Consumer Reports found lead and cadmium in dark chocolate; some brands publish testing.
