What our research found about flour & baking mixes

Flours and baking mixes behave very differently depending on the grain. All-purpose, whole wheat, einkorn, cassava, almond and gluten-free blends are not interchangeable in recipes, and mixes (pancake, waffle, muffin, brownie) add sugars, leaveners, and sometimes oils or flavorings. The shortest lists belong to single-grain flours; mixes with a protein or “keto” positioning usually combine several flours, gums and non-sugar sweeteners.

Gluten-free flours are blends of starches and gums, so cross-contact and labeling matter: the FDA permits “gluten-free” only below 20 ppm. Whole-grain flours go rancid faster than refined flours because the oil in the germ stays in, so storage and freshness are worth a look. Compare flours by grain and processing, and mixes by added sugar per serving.

What to compare

  • Grain and processing. Whole, sprouted, enriched and bleached flours differ in fiber and shelf life.
  • Mix sweeteners. Compare sugar, monk fruit, allulose or erythritol content in mixes.
  • Gluten-free claims. Look for a gluten-free label if cross-contact matters to you.
  • Freshness. Whole-grain and nut flours keep best refrigerated or frozen.

Unknown and stale evidence never passes “Only show matches.” The clean score is strict and needs no setup: nine additive groups on the current label plus verified organic and sourcing claims; without them a product cannot reach 100. It is not a nutrition, allergy, or safety rating.

“Buy on Amazon” opens a reviewed product listing; “Search on Amazon” opens an Amazon search for the product, so pick the exact match yourself. Confirm the package, seller, availability, and current price before checkout. Buying links do not influence ingredient results.

The clean score is strict and needs no setup: nine additive groups not found in a current ingredient statement, plus a verified organic claim (and a grass-fed or pasture-raised claim for animal foods), are needed for 100; a possible match earns half and a missing claim earns nothing. Missing or expired evidence stays unknown. It does not assess nutrition, allergies, contaminants, or safety.
